Estiatorio Milos at The Cosmopolitan of Las Vegas

Milos is an amazing Greek restaurant that opened earlier this year in The Cosmopolitan Hotel in Las Vegas.

The original Milos is in Montreal and it’s legendary…  but I have never been.  Coincidentally, none of my Montreal friends who I was meeting in Vegas this weekend had ever gone either.

Our random Milos connection:  My friend Josh is the fantastical executive chef at the Milos in Las Vegas and… he made us a mindblowing tasting menu!  [be jealous!]

Tasting Menu:

Oysters – Kushi and Kumamoto on a half shell.

Tasting of Raw Fish – Emperor with chili, cilantro and lime;  Lavraki with thyme leaves and lemon;  Solette with watermelon radish and meyer lemon;  Lithrini with golden balsamic and rosemary;  Tuna with bergamot, dill and chili.

Milos Special – Lightly fried zucchini & eggplant with tzatziki & kefalograviera cheese.

Grilled Peppers – Assorted sweet peppers with olive oil, aged balsamic, & sea salt.

Octopus – Grilled Mediterranean octopus with oregano, wild Santorini capers, apple vinegar & olive oil.

Kalamari – Fresh calamari lightly fried with lemon. 

Tomato – English cucumber, red onion, green peppers, olive oil, oregano, Santorini capers & Barrel aged feta cheese.

Saganaki – Pan Seared Cheese

Fagri – Snapper. From the crystal waters of the Greek island of Limnos. White, firm and sweet.

Skorpena – Rascasse. From Kaliminos in the Aegean Sea. Ivory, firm and meaty.

Horta – Swiss chard and Bloomsdale spinach with lemon, olive oil & sea salt.

Loukoumades– with honey and walnuts

Svigous – sweet fritters with vanilla cream and sour cherry compote

Galaktoboureko – semolina custard wrapped in crispy phyllo

Baklava – walnut pastry with pistachio cream

P.S.  I’ll try to remember the name of the method of preparation of the Skorpena and I’ll post a video of it being served at our table.
